Tasting notes

Pale gold in the glass, with fresh aromas of citrus, white peach, green apple, and delicate floral notes, lifted by a subtle hint of mineral and toasted almond. The palate is crisp and finely textured, showing ripe orchard fruit, lemon zest, and a clean, chalky freshness. Balanced and elegant, with a lively acidity and a smooth, lingering finish.

Viticulture

Domaine Olivier Merlin Saint-Véran "Le Grand Bussière" is a white wine from the southern part of Burgundy, in the Mâconnais, where the Saint-Véran appellation produces elegant and expressive Chardonnay. This cuvée comes from the Le Grand Bussière vineyard, a site that brings freshness, balance, and a clear mineral character to the wine. In the glass, it often shows aromas of white flowers, citrus, ripe pear, and subtle stone fruit, with a clean, lively palate and a round, generous texture. The style is refined and precise, reflecting both the character of the terroir and the careful work of Domaine Olivier Merlin. It is a wine that pairs well with seafood, poultry, soft cheeses, and refined dishes, offering both freshness and depth.

Oenology

Domaine Olivier Merlin’s Saint-Véran “Le Grand Bussière” comes from the southern part of Burgundy, in the Mâconnais, where Chardonnay finds a fine balance between freshness and ripeness. The wine is made with a careful, parcel-based approach that highlights the character of this specific lieu-dit. Grapes are harvested by hand at optimal maturity, then gently pressed to preserve purity and finesse. Fermentation is carried out with controlled temperatures, often using indigenous yeasts to respect the identity of the vineyard. The wine is typically aged on its lees, with part or all of the élevage taking place in oak barrels and/or stainless steel, depending on the vintage, in order to build texture without masking the fruit. This oenological style aims for a precise, mineral expression of Saint-Véran, combining citrus and white-fleshed fruit aromas with a clean, elegant structure and a supple, rounded finish.

Suggestions for accompaniment

Domaine Olivier Merlin, Saint-Véran "Le Grand Bussière" is a fresh, elegant white Burgundy with bright citrus, white stone fruit, subtle floral notes, and a fine mineral finish. It pairs beautifully with delicate seafood such as oysters, shrimp, scallops, grilled sole, or sea bass. It also works well with roast chicken, veal, creamy pasta, mushroom dishes, asparagus, and soft cheeses like goat cheese or fresh Brie. As accompanying dishes, choose light salads, steamed or roasted vegetables, risotto, new potatoes with herbs, or a simple lemon-butter sauce to complement its crisp, refined character.
