Les raisins sont généralement récoltés à maturité optimale afin de préserver l’équilibre entre fraîcheur, intensité aromatique et structure. La vinification vise à exprimer le caractère variétal du cépage tout en respectant la finesse du terroir toscan. Les fermentations se déroulent le plus souvent en cuves inox à température contrôlée pour conserver les arômes primaires de fruits jaunes, d’agrumes, de fleurs et parfois de notes légèrement herbacées.
