Le Sauvignon Gris de Cantina Petreto di Alessandro Fonseca, en Toscane, est élaboré à partir d’un cépage aromatique et délicat, proche du Sauvignon Blanc mais plus rond et plus riche. Les raisins sont généralement récoltés à maturité optimale afin de préserver l’équilibre entre fraîcheur, intensité aromatique et structure. La vinification vise à exprimer le caractère variétal du cépage tout en respectant la finesse du terroir toscan. Les fermentations se déroulent le plus souvent en cuves inox à température contrôlée pour conserver les arômes primaires de fruits jaunes, d’agrumes, de fleurs et parfois de notes légèrement herbacées. Un élevage sur lies peut être pratiqué pour apporter du volume et une texture plus souple en bouche. Le résultat donne un vin blanc sec, vivant et élégant, marqué par une belle fraîcheur, une matière harmonieuse et une expression aromatique nette.
